Taking you away from the busy beaches and deep into Wexford’s farming landscape, we visit two very different farms and one very special watermill.
We’ll visit Mary Regan first, Mary has the prettiest farm filled with happy healthy free range birds and animals. As you walk around you’ll meet the pigs, chicks and Alpacas and hear about Mary’s long history with Organic Farming. We’ll indulge ourselves by picking Strawberries with Cyril and Margaret Wheelock, Wexford’s best known berry farmers, and considering Wexford is famous for its berries that’s quite the boast!
But the highlight for many is meeting 3rd generation Miller John Murphy, as he takes you on a journey of the locally grown wheat to Stoneground flour in his stunning and ancient Watermill, unchanged in almost 200 years.

This tour takes you an a journey through Ireland’s food heritage. We take one of our most iconic dishes, Smoked Salmon on Soda Bread and go back to its source. A watermill producing stone ground flour for almost 200 years, the Mill, untouched by modern machinery. We visit fisherman Mick Walsh in his home to see how Smoked Salmon was made traditionally, using an 80 year old Smoke-house and finally, we see a little of the “Upper Crust” on a tour of Colclough Walled Gardens. Over 200 years old, you will discover how the Landed Classes created the perfect micro-climate with to grow exotic fruits and vegetables in Ireland’s normally cold and wet climate.

Wexford’s fishing industry is a huge part of our local economy and culture, fresh fish caught off the coast of Wexford can be sent as far afield as Germany, Switzerland and Austria. So on this tour, we’ll take the scenic coastal route, stopping along the way to take in a couple of little fishing villages before visiting Mick Walsh at his home in the seaside village of Ballyhack. Here Mick will show you the traditional methods used to smoke and fillet fish and how independent fishmongers sell fish from Kilmore Quay every day across Ireland. You’ll enjoy a delicious seafood lunch and at the end of the day, you’ll climb to the top of Hook Lighthouse and survey the coastline you’ve spent the day exploring!
